If you want a really easy cake to make for a potluck or you want something fun to make with your kids, take a look at Jello Poke Cake. The recipe here uses raspberry Jello, but you can use any flavor you like. You can even do two different layers in different Jello colors. When you cut into the double layered cake, it will look impressive. Just imagine making one with a red layer and a green layer for the holidays. It would look so festive and pretty!
This recipe would be considered hip and retro these days; it dates back to Jello recipe books from the mid-1970s. Many of you may remember eating this as a kid. No matter if you remember it or not, this is a tasty dessert that is easy to throw together. Your kids will have a great time poking the cake with a fork and watching the Jello seep into the cake. Go ahead and let them go a little crazy. They will be amazed when you cut them a slice and they see the colorful streaks of Jello running throughout the cake. Do not be surprised if they ask you to make this dessert over and over again.
If you want to make it true to its 1970s roots, top the cake off with Dream Whip. If you prefer Cool Whip today, use that. You could even use real whipped cream if you want, but it will separate faster than the other two choices. This is a great blast from the past recipe that actually tastes great. Let yourself indulge in a little nostalgia and give it a try sometime.
Because of its history, you may want to make this for a family reunion, or for a '70s theme party. Of course, you can make this recipe just because you want to. You really do not need any specific reason. It is just one of those fun desserts to indulge in once in awhile. We all need that sometimes. Go ahead and relax with a plate of Poke Cake.
